Daniel Boulud Brasserie
Las Vegas, NV

by Lily Tsen

Located on the bottom floor of the Wynn Hotel, Daniel Boulud in Las Vegas is the newest addition to the ritzy dining chain.   Creator and French gourmet chef, Daniel Boulud established his first restaurant in New York City in 1993, shortly after he moved to the United States from Europe.   He is extremely involved in his business, personally insuring the quality of the service for the first three weeks of the opening at Wynn and regularly visiting thereof.

The main dining room, formal and cozy, is centered by one long, curvaceous booth.   Its perfect illumination is made-possible by small ceiling installations, retro lamps, and romantic candles.

Ask for patio seating or seats facing the man-made waterfall and open lake, which is surrounded by a forest of flawless evergreen and planted with copper statues of nude humans.   At 9PM nightly, a five-minute light show is scheduled to astound, mesmerize, and impress diners with its flashing digital images, radiant colors and hues, and display of technological phenomenon.   This dreamlike feature of the restaurant is an oasis of serenity and peace amid sin and vice that Las Vegas is reputed for.   Its view and cascading sounds would undoubtedly enhance your experience as you enjoy their hospitable service and tasteful refreshments.

The appetizer menu includes caviar, a fine selection of artisan charcuterie and patés, fresh salads, potages (soup), and an assortment of fromages.   Must-try : Lobster & Watermelon salad--the lobster's bitterness balances the fruits' sweetness; this combination equals perfection.   Most of the appetizers are sophisticated and savory but cold; fortunately, the main course selections make out for it in temperature and flavor.   The entrée menu comprises of poissons (fish), viands rissoles and plats mijotés (from duck to steak).   Must-try : 1) spiced tuna steak; 2) oregano-braised veal cheeks--it melts on contact and its roasted smell fills the room.   If you're not in the mood for froufrou dining, try their all-American burgers with a French twist; don't forget about pommes frites ( French fries).

At the end of the meal, treat yourself to a raspberry tart, an eight-inch dessert fantasy landed with, of course, sweet raspberries and sprinkled with crushed pistachios.

Private entertaining is available in their salon and oval dining room, which can accommodate 30-100 guests.
