The interior resembles a Paris Bistro with a twist--light mesh curtains, warm amber surroundings, and a candlelit ambiance.    Modern-medieval "fishnet" chandeliers hover above patrons as they continue intimate conversations.   Few restaurants replicate this soft dreamy atmosphere.

This vegetarian cuisine is bound to please even the most carnivorous specimen. Chef Tucker says "At Millennium we definitely dispel the stereotypes and misconceptions held by many about low-fat and vegetarian cuisine.   My mission is to show the public that you don't have to compromise flavor or texture as you cut out harmful, high fat, animal products and oil.   The majority of the population doesn't realize that you don't need meat to survive."

Chef Tucker carefully calculates the interaction of various textures.   From the smooth creaminess of butter squashed spread to the miniscule crunch of a sesame seed, this vegan cuisine is fused together to form the most pleasing combination of organic products.
