T-4 serves a combination of local and classic culinary cuisine.   With true hunter spirit, feast on the bacon-wrapped pheasant breast.   This slowly roasted sensation is served with wild greens and a delicious wild mushroom pan sauce.   The tomato fideo (thin noodles) balance the mild salty flavor of the luscious pheasant.

Cooked as a tender cut of perfection, the New Zealand Deer is pan-seared with gorgonzola potato gallet.   Served with a micro-green salad, subtle tastes of wine and butter permeate throughout your palette as the meat slowly melts and diminishes, very little chewing involved.
